Burgul Behommos برغل بحمص

 Burgul Behommous is a festive dish of course whole wheat bulgur and chickpeas cooked in a mix of aromatic spices and stock (veg stock for vegan option). Syrians take pride in cooking this dish for family gatherings and celebrations. 

[Meat Option]

The Burgul Behommos is accompanied with oven roasted chicken (halal), that has been marinated in a seven spice blend, and smoke infused to deepen the flavours. 

[Vegetarian Option] 

Every region, village and household has their own take on their own spice blends, and so do the Flavours of Al-Shaam. Mushrooms, carrots and peas are simmered in a blend of special spices that create a new experience.  |Contains Almonds| |Vegan|

Salads & Sides

Saltet Shamandar سلطة شمندر

A colourful beet salad on a bed of arugula, garnished with parsley and pomegranate molasses in an olive oil & lemon dressing. A summer classic.|Vegan|

Yakaneh سورية مسقعة

Yakaneh is a general Syrian name used to describe hearty, home-style stews. This one is served room temp like a french ratatouille featuring seasonal batinjan (eggplant), peppers and tomatoes infused with the Flavours of Al Shaam spice blend. |Vegan|

Fatayer فطاير 

This a whole category of delicious small baked treats that range from open-face, pizza-like flatbreads to cute little baked turnovers, with countless different shapes and fillings. 

Spinach Fatayer سبانخ‎ فطاير This type is a triangular pastry filled with spinach and onions cooked in olive oil, flavoured with pomegranate molasses, for a sweet and tangy taste. |Vegan|

Cheese Fatayer فطاير جبنة Is a different style of fatayer that has little boat shape topped with a mix of cheeses, parsley and nigella seed brushed with eggs and milk to give a beautiful golden colour.

Dessert

Maamoul  معمول

Rich, buttery shortbread cookies stuffed with a date filling, are pressed into decorative shapes in carved wooden molds. And to share a different technique, they will also be made by hand and ingeniously finished with tongs.|Vegetarian|
