Warm the Mid-Winter Blues Menu from She Cooks

While we weather the winter dreaming of warmer climes and times what better way to brighten up a dark winter’s evening than with bowls of hearty, nourishing and flavour filled food fresh from the ovens of Newcomer Kitchen. Our newest cohort of cooks chose the name She Cooks and their tag line is The World on Your Fork. This group of cooks come from India, Morocco, Ethiopia, and Uganda. Our big news around here is that we now, finally after 6 years,  have our very own full time kitchen!!  It’s big, bright and beautiful and nestled within the amazing social justice, arts & faith community at Trinity St. Paul’s United Church. We are so grateful to TSP for inviting us in and giving us such a warm welcome. This dedicated kitchen will allow us to further support the aspirations of our newcomer cooks as they advance along their food entrepreneurship journey. TSP will become one of our pick-up locations going forward.

Meat Main Dish: Kefta 

Ghita from Morocco makes these Moroccan meatballs with halal lean ground beef, onion,  garlic and a rich blend of Moroccan spices. They are then simmered in a cumin, paprika tomato sauce to create plump moist meatballs with sweet and earthy undertones.

Vegetarian Main Dish: Kadai Paneer

Cubes of Indian pressed cottage cheese and flavourful sweet peppers are cooked in a creamy, rosy rich sauce made with freshly ground and dry roasted spices and whole tomatoes. It  is a warming, richly flavoured dish with a robust but gentle kick.
Priya from India explains: “The dish is called Kadai because it is cooked in a Kadai, a kind of Indian wok.”

Side Dish (All) Ye’abesha Gomen

If you are looking for an authentic Ethiopian dish, this is one of the most popular. What sets these sautéed greens apart from the average is the addition of Niter Kibbeh, an Ethiopian spiced clarified butter. The cinnamon, black peppercorns, fresh ginger and cumin make this dish both aromatic and extremely flavourful, and the addition of chickpeas adds texture, more fibre and protein.
Selam says: “my son loves it so much he doesn’t even know it’s healthy”

Side Dish (All) Pulao

Basmati rice subtly seasoned with roasted aromatic herbs and spices and cooked in veggie broth. It works well as a compliment to a saucy entree. 
Alka from India says: “ It tells you it’s there without taking over the flavour of your main dish”

Fresh Naan slathered with roasted garlic and fresh parley

Pineapple Upside Down Cake

A luscious cake studded with pineapples, cherries and roasted pecans. It is a buttery moist cake fragrant with vanilla, caramelized brown sugar and roasted pineapples.
Mary from Uganda says: “ The name upside down fills me with positive vibes. It turns your dull mood upside down.  It’s my favorite family dessert”
